Humboldt Brewing Company 500 BC DIPA

Humboldt 500 BC8.3% ABV. Double Imperial Pale Ale from Humboldt Brewing Company (brewed at Firestone Walker Brewing Co) in Paso Robales, CA. I came across this beer when visiting a beer shop in the southwest and wanted to give this one a try. Pours dark amber with a very nice ivory head leaving behind soapy lacing throughout. The armoa picked up pine, grapefruit, light toffee, and caramel. The flavors begin with that light toffee and caramel undertones which leads to pine, resin, grapefruit and finishes off with a hop bitterness. Medium sticky mouthfeel and good carbonation. This DIPA was simple and technically well-made but somewhat lacking the adventure that I typically find in my favorite DIPAs.
